<p>This is fabulous served piping hot or chilled.</p>
<p>Ingredients:<br />
1 onion<br />
4 or 5 tomatoes<br />
1 eggplant<br />
2 large zucchini<br />
1 and a  half large capsicum<br />
Garlic, thyme basil and pepper as you like it.</p>
<p>So quick and easy, you just chop it as you cook it:</p>
<ul>
<li>Start with thinly sliced onion and garlic in a heavy pan over medium heat; stir until a little softened and then</li>
<li>add diced capsicum and stir it in &#8211; let simmer with lid on while you chop</li>
<li>add diced eggplant and stir it in - let simmer with lid on while you chop</li>
<li>add diced  zucchini  and stir it  in - let simmer with lid on while you chop</li>
<li>add diced tomatoes and stir well - let simmer with lid on while you chop</li>
<li>add fresh thyme and pepper and stir in  -  reduce heat to very low and let simmer until done &#8217;til how you like it.</li>
</ul>
<p>Just before serving add plenty of fresh shredded basil and stir through.</p>
