Ratatouille – Here’s something you won’t find in Alice’s cook book

Ratatouille

This is fabulous served piping hot or chilled.

Ingredients:
1 onion
4 or 5 tomatoes
1 eggplant
2 large zucchini
1 and a  half large capsicum
Garlic, thyme basil and pepper as you like it.

So quick and easy, you just chop it as you cook it:

  • Start with thinly sliced onion and garlic in a heavy pan over medium heat; stir until a little softened and then
  • add diced capsicum and stir it in – let simmer with lid on while you chop
  • add diced eggplant and stir it in - let simmer with lid on while you chop
  • add diced  zucchini  and stir it  in - let simmer with lid on while you chop
  • add diced tomatoes and stir well - let simmer with lid on while you chop
  • add fresh thyme and pepper and stir in  -  reduce heat to very low and let simmer until done ’til how you like it.

Just before serving add plenty of fresh shredded basil and stir through.
